About Dayspring Dairy

Dayspring Dairy is Alabama's first and only sheep dairy and makers of award-winning cheeses, sheep milk Dulce de Leche caramel, shortbread cookies, jams and fruit butters.  We are a family farm; owned and operated by husband & wife team, Greg & Ana Kelly.  Our goal is to produce unique, delicious, and healthy cheeses and products for our customers. Dayspring Dairy cheeses start with the highest quality milk from our flock of dairy sheep who graze on pasture year round. We enjoy supporting Alabama and regional growers and use locally grown fruits, chili peppers, and herbs as much as possible to flavor our cheeses. All of our fruit butters and jams are made exclusively with fruit from Alabama and Georgia, allowing us to select the best quality fruit that is fully ripe to maximize flavor all while supporting local growers.

The idea of Dayspring Dairy was born while we had professional careers but felt led to do something different with our lives.  After visiting a sheep dairy in Tennessee in 2010, we knew right away that this is where God was leading us.  In 2011, we purchased a beautiful farm in Gallant, nestled in a valley in the piedmont of north-east Alabama with lush rolling pastures.  After months of research, including visiting several sheep dairies across the country, construction on our dairy and creamery began in 2012. We became fully licensed the following year and made our first appearance at Pepper Place Market in August of 2013. Since then, our product lineup as grown considerably and customers from across the country have been enjoying our products for over a decade.

Why the name Dayspring? Dayspring is an archaic word for dawn or sunrise and is a biblical reference to Jesus.  We know God has led us to do this endeavor which is why we have named it Dayspring Dairy, to give Him the honor and glory.
