DESCRIPTION Made in the traditional method, our ricotta is hand dipped from whey only. After making Halloumi, the leftover liquid from the milk is heated to 190 degrees and a small amount of citric acid is added to bring out the last whey proteins. As a result, it is creamy and smooth with just a bit of the sweet nuttiness of the sheep milk. It is also lower in fat and high in protein making it a great no-compromise cheese for the health conscious.
